Easy Easter Bunny Whoopie Pies

I was looking for ideas for a super easy but totally cute dish to make for Easter, taking into consideration that I would be making it in between caring for a toddler and a one-month-old. I came across a few recipes for Whoopie Pies, including one from the Betty Crocker website, which inspired my version.

However, instead of making traditional whoopie pies with fluffy filling, I decided to take this cake-like cookie and dunk it in melted frosting. This made them easy to eat, and I liked the juxtaposition of the thick, soft "whoopie pie" with the thin, crunchy, flavorful coating of icing.

The details of the eyes and ears were simply drawn on with melted chocolate. Throw them onto a dish sprinkled with jelly beans or place them in an Easter basket for an adorable presentation!

You can use just about any flavor combination you can think of, so you might as well have fun with it. Maybe try carrot cake since it's rabbit themed? But whatever you choose, make sure the cake and icing flavors combine well. I made two batches, which gave the finished platter more variety then if I had only used one.

I made two pretty different, but color coordinating, flavors of bunnies and, honestly, I liked them both. For the first, I used strawberry cake mix for a pink cookie and dipped them in a melted chocolate fudge frosting. I used white candy melts to draw on the ears and eyes.

Then I used a chocolate cake mix for the second cookie, which was dipped in a vanilla icing dyed pink. I used dark cocoa candy melts to draw on the details, because I had them on hand from another project, but you could easily use chocolate chips instead.

Drawing on the eyes and ears is easy. You could get much more detailed, but I'm a fan of simplicity. Just melt the candy or chocolate right in a plastic resealable bag (at half power), then clip a very small hole in one corner to squeeze out your design.
