Microwave Cooking: Delicious Dessert Recipes
Microwaves are very versatile machines. They can be used for so much more than just reheating your cold coffee and warming up pre-made frozen meals!
Here we'll explore some yummy and easy desserts, from apple pie to chocolate cake, that are cooked in the microwave instead of a conventional oven for those days when you want to cook a quick, delicious treat without heating up the whole kitchen, too.
French Apple Pie
I love apple pie! This recipe is a quick and easy way to enjoy all of the cinnamon-y, gooey goodness that I love, while still getting that great fresh-apple-pie smell in my kitchen.
Ingredients:
1 9-inch Pastry Shell
5 to 6 Cups Apples, cored, peeled and sliced
1 Tbsp. Lemon Juice
½ cup Sugar
2 Tbsp. Flour
½ tsp. Cinnamon
Topping Ingredients:
¼ Cup Butter
½ Cup Flour
¼ Cup Brown Sugar
Place the pastry shell in an 8-or-9-inch, microwave-safe pie plate. Take a fork and poke holes all around the pastry where it bends in the dish, and at ½ inch intervals over the bottom of the pastry. Microwave the pastry on high for 6 to 7 minutes, rotating after 3 minutes if you don't have a turntable. When done, the bottom should appear dry and opaque. It won't brown as much as it would in a conventional oven, but the sides should be crispy and flaky.
Meanwhile, slice the apples and toss them with the lemon juice. Then mix in the sugar, flour and cinnamon, making sure all the apples are coated by the mixture. Pour the apple mixture into the pastry shell. Combine the topping ingredients in a separate bowl by cutting the butter into the flour and brown sugar until it appears crumbly. Sprinkle the topping mixture over the apples.
Microwave on High for 14 to 18 minutes, rotating after 8 minutes if you don't have a turntable. When it's done, the apples should be tender. Enjoy!

Microwave Chocolate Cake
I loved the concept of a microwavable chocolate cake, but couldn't find one that worked well, mostly because I didn't like what happened with the eggs in the batter. So I did some experiments and many trials (and dirty dishes) later, I came up with this tasty, quick, one-dish recipe.
Ingredients:
1/2 Cup Flour
1/3 Cup Sugar
1 Tbsp. Cocoa
1/4 tsp. Baking Soda
Pinch of Salt
1/3 Cup Cold Water
2 Tbsp. Vegetable Oil
1/4 tsp. Vanilla Extract
1 tsp. White Vinegar
1/8 Cup Chocolate Chips
In a 2-Cup glass measuring cup, mix the flour, sugar, cocoa, baking soda and salt. Mix it very well with a fork. Then stir in the cold water, oil, vanilla, and vinegar. Make sure you mix the wet ingredients into the dry thoroughly.
Sprinkle the chocolate chips over the top (they will sink into the batter as it cooks). Microwave on high for 3 to 3 ½ minutes. Don't overcook it.
When it's done, there will be some wet spots but it will bounce back lightly when touched. Leave it in the glass for one or two minutes, so it can finish cooking.
If you're really, really hungry you could eat the whole thing yourself, but it's really a two-person serving. Scoop the cake into two bowls, generously sprinkle with powdered sugar and/or top with a scoop of ice cream. Enjoy!

Crumb Coffeecake
A fluffy treat, this coffeecake is simple but satisfying. Cooking it at half power first allows the cake to rise and cook throughout; otherwise the outer edge would overcook before the center is finished.
Ingredients:
1 Cup Flour
2/3 Cup Sugar
1/3 Cup Shortening
1 ½ tsp. Baking Powder
½ tsp. Salt
½ tsp. Vanilla
2 Eggs
½ Cup Milk, divided
Topping Ingredients:
½ Cup Flour
2 Tbsp. Sugar
3 Tbsp. Cold Butter
½ tsp. Cinnamon
In a medium bowl, blend the topping ingredients with a pastry cutter to a consistency of fine crumbs.
In a medium to large mixing bowl, add the flour, sugar, shortening, baking powder, salt, vanilla, eggs and half of the milk. Blend it at a low speed until well mixed, about 15 or 20 seconds.
Then beat at medium speed for 1 minute, until fluffy. Add the rest of the milk and beat at medium speed for 1 more minute. Line a 9-inch, microwave-safe pie plate with parchment paper, cut to fit, and then pour the batter into the plate.
Sprinkle the topping over the pie and microwave for 6 minutes at half power (50 percent). If you don't have a turntable, rotate the pie a half turn at 3 minutes. Then cook on high for 3 to 5 more minutes, until the cake springs back when touched. Cool in plate for a few minutes before eating. Enjoy!
